Ingredients

  • 1 egg, beaten
  • 1 tablespoon Dijon mustard
  • 1/2 cup mayonnaise
  • 1 tablespoon Worcestershire Sauce
  • 1 tablespoon hot sauce
  • 1 lb lump crab meat
  • 20 saltine crackers, crushed
  • 1/4 cup canola oil
  • Half a lemon wedge for garnishing

Procedure

  • In a medium bowl, beat the egg. Add mayonnaise, mustard and Worcestershire sauce to taste.
  • Mix the crab meat and cracker salt together with the mayonnaise mix, and then cover and chill for one hour.

Ingredients

  • 3 cloves of garlic
  • 1 tablespoon of canola oil
  • 1 tablespoon dried oregano
  • 1/2 teaspoon pepper
  • 1/2 teaspoon ground cumin, and cloves
  • 4 guajillo chillies, stemmed and cut into 2-inch pieces
  • 1/3 cup pineapple juice
  • Sea salt to enhance the taste
  • 2 lb boneless pork shoulder, cut into medium-sized pieces
  • 1/2 medium pineapple, peeled. Slice 1/2 inch thick
  • 1 large onion

To garnish, warm corn tortillas with chopped cilantro and lime wedges

Procedure

  • Heat oil in a saucepan. Add garlic, oil and heat it on a medium heat. Stir the pepper, oregano and cumin until they release their aromas. Stir in the chillies, then add the vinegar, pineapple juice, and achiote paste. Keep the flame at low.
  • Combine the paste with the pork, cover it tightly and let it rest for at least one night.
  • Grill the pineapple and garlic, then oil it. The pork should be grilled for 3-4 minutes.
  • Slice the onions, pineapples, and pork into thin strips. Transfer it to a bowl. Add salt to taste. Serve with tortillas, cilantro chopped and lime wedges.
