You don’t have to agree with me when I say cauliflower tastes like rice. It doesn’t. It doesn’t happen to me anyway. There is something to be said for cauliflower that has been “riced.” That is cauliflower that has been minced into small granules. It is a useful and fun ingredient. Today I will be highlighting an easy recipe that uses riced cauliflower. The Southwest Cauliflower Rice is a delicious side dish or a complete meal. Continue reading to learn how.

What is CAULIFLOWER RICE?

Cauliflower rice means cauliflower that has been chopped into rice-sized granules. This versatile vegetable fiber can be used to enhance your meals with a variety of flavors. This can be found in most grocery stores’ freezer sections. You can also make your own using a food processor and a knife. This tutorial will be available later in the week.

Because many people use it to replace rice, cauliflower rice has gained popularity in the low-carb movement. They are not similar to mine, but I find them useful in their way.

TAKE A SHORT CUTS WITH TACO SEASONING

This dish was seasoned with my Homemade Tomato Seasoning. However, if you don’t have enough spices or a small spice collection, you can substitute one packet of store-bought taco sauce for the herbs and spices in the recipe.

IS IT SPICY??

This would be a medium-spicy dish. The chili powder or diced tomatoes with green chilies will provide most of the heat. There are milder versions of chili powder and diced tomatoes, but they can still be very hot. If you don’t like heat, you should look for non-spicy varieties of these ingredients. Fire-roasted diced tomatoes can be substituted for the tomatoes with green chilies.

HOW TO SERVE SOUTHWEST CAULIFLOWER RICED

This easy recipe is a great side dish for any southwest-flavored dish such as Hearty Black Bean Quesadillas or Green Chile Chicken EnchiladasBaked Beef with Black Bean TacosBlack Bean Enchiladas. You can make cauliflower rice a complete meal by adding a few more ingredients.

MAKE IT A MEAL

You can make Southwest Cauliflower rice a complete meal by adding a can of black beans, ground beef, or turkey to it. Then, you can top it with some shredded cheese and sliced avocado. That recipe sounded so good that I made a similar one as my main meal. 

SOUTHWEST CAULIFLOWER RICED

Southwest Cauliflower rice is an easy side dish that’s quick and easy. It can also be made into a complete meal.

Prep time: 5 minutes

Cooking Time: 10 minutes

Total Time: 15 minutes

INGREDIENTS

  • 2 cloves of garlic ($0.16)
  • 1 Tbsp olive oil ($0.16)
  • 4 cups cauliflower rice ($1.66)
  • 1 10oz. Can diced tomatoes with green chilies ($0.50)
  • 1/2 Tbsp chili powder ($0.15)
  • 1/2 tsp smoked paprika ($0.05)
  • 1/2 tsp ground cumin ($0.05
  • 1/4 teaspoon dried oregano ($0.03)
  • 1/4 tsp salt ($0.02)
  • 1/8 teaspoon freshly cracked black pepper ($0.02)
  • Two sliced green onions ($0.20).

INSTRUCTIONS

  • Add the minced garlic to a skillet along with the olive oil. Sauté the garlic on medium heat for approximately one minute or until it is fragrant and slightly softened.
  • Continue to sauté the cauliflower rice for approximately five minutes or until it becomes softer.
  • Add the diced tomatoes and green chilies, and all the juices to the pot. Season the dish with all the spices: cumin, chili powder, smoked paprika, cumin, oregano salt, and pepper. Stir and continue to cook for five more minutes, or until most liquid has evaporated.
  • You can adjust the seasonings and salt to taste the cauliflower rice. Serve with sliced green onion and a sprinkle of salt.
