WHY ROASTED ASPARAGUS IS MY FAVORITE THING

There are many ways to cook asparagus. But roasting is my favorite. Roasting concentrates the flavor to get a deeper, savory flavor than other cooking methods such as steaming or sauteing. They get crispy edges which give them a wonderful texture. They are a joy to eat.

WHAT IS THE ASPARAGUS SUMMER?

As I said in the introduction, asparagus should be purchased in the season to get the best flavor and price. Asparagus is in season from February through June, depending on where you live.

HOW TO CHOOSE GOOD ASPARAGUS

Avoid buying asparagus that has been kept dry at the grocery store. Make sure to inspect the cut ends for dryness. If possible, place the ends in water. Also, make sure that the asparagus is not too soft or rubbery. The stalk should be closed tightly at the flowering end.

Lemon Garlic Roasted Asparagus is a simple side dish that can be used with grilled or roasted meats. This asparagus goes well with Lemon Pepper Chicken or Brown Sugar Roasted Pork LoinHoney Mustard Pork Chops or Creamy Mushroom Chicken With Crispy Onions. To drizzle on the delicious asparagus, you might make Hollandaise Sauce.

LEMON GARLIC ROASTED ASPARAGUS

Lemon Garlic Roasted Asparagus makes a great side dish with grilled and roasted meats.

Prep time: 10 minutes

Cooking Time: 20 minutes

Total Time: 30 minutes

INGREDIENTS

  • One bunch of asparagus (1 Lb. ($1.88)
  • 2 cloves of garlic ($0.16)
  • 1 Tbsp olive oil ($0.16)
  • 1/8 tsp salt ($0.02)
  • 1/8 teaspoon freshly cracked black pepper ($0.02)
  • 1 fresh lemon ($0.89)

INSTRUCTIONS

  • Pre-heat the oven to 400oF. After washing the asparagus, trim the woody or dry ends of the stem. This usually takes about one inch. Mince two cloves.
  • For easy cleanup, line a baking sheet using parchment paper. Place the chopped asparagus and minced garlic on the baking sheet. Sprinkle the olive oil on top. Then, season with salt and pepper. Toss the asparagus in olive oil, salt, pepper, and garlic until coated.
  • Place the asparagus in a 400oF oven. Roast for 20 minutes, or until the asparagus is browned to your preference. The time will vary depending on how big your asparagus is. Stir halfway through roasting.
  • As the asparagus is cooking, zest the lemon with a box grater (or small-holed cheese grantor) while it’s still warm. About 1 teaspoon of zest is needed. Cut the lemon into small wedges after zesting.
  • After the asparagus has been roasted, mix the lemon zest with a few squeezes of lemon juice. Mix to coat. Adjust the salt and lemon to your liking. Serve the lemon wedges remaining.
